Focaccia Bread with Baked Tomatoes

Instructions

Wash and slice the tomato into 7-8 rings. Place them on an oven tray which is covered with baking paper.

Preheat the oven at 180℃. (fan mode on)

Bake the tomatoes for 15 minutes. Place the tray on the counter to cool down.

Cut the baked tomato slices into smaller pieces for later.

Mix water, 1 tablespoon of olive oil, yeast, sugar and salt in a large bowl with a whisk.

Add spices and flour into the mixture and keep mixing. You should get a sticky dough at the end, you don't have to add additional flour.

Add the tomato pieces into the dough and mix gently.

Transfer the dough into a circular oven tray which is covered with baking paper. Pour 2 tablespoons of oil on top of the dough and push it with your fingers until you evenly spread the dough inside the tray.

Preheat the oven at 180℃. (fan mode on)

Bake the focaccia for 25 minutes, then bake for 10 more minutes with fan mode off.

Recipe Notes
If you use dried tomatoes instead of fresh ones, you can skip the tomato baking step. You can substitute 1 tomato with 100 grams of dried tomatoes.
