Potato Puree and Cheese Stuffed Meatballs

Ingredients
    For Meatballs
  • 400 g Minced meat
  • 8 tbsp Breadcrumbs
  • 1 tbsp Ketchup
  • 1 Egg
  • 2 tsp Salt
  • 4 tsp Black pepper
  • For Stuffing
  • 2 tsp Salt
  • 2 Potatoes
  • 200 g Heavy cream
  • 2 tbsp Milk
  • 2 tsp Black pepper
  • 1 tbsp Mint
  • 1 tbsp Thyme
  • 4 tbsp Grated parmesan
  • 4 tbsp Grated Mozzarella (or kaşar)
  • 2 tbsp Butter
Instructions
    For Potato Puree Stuffing
  1. Boil the potatoes in boiling water for 15-20 minutes.
  2. Peel and mash the boiled potatoes in a bowl.
  3. Place the mashed potatoes and butter on a pan, add milk and heavy cream. Cook until it boils then add the spices.
  4. Keep stirring in low heat until it becomes denser. Take it away from the burner and let it rest on the counter.
  5. For Meatballs
  6. Mix the minced meat, bread crumbs, egg, spices and ketchup in a large bowl.
  7. To prepare the meatballs for stuffing divide the mixture into half-fist sized pieces.
  8. Lay down a piece of baking paper on the counter. Place one piece of meat on top.
  9. Place another layer of paper on top of the meat and start rolling it out with a rolling pin above the second layer of paper.
  10. Roll out until you get a circle. Put one tbsp of potato puree mixture, one tbsp of grated parmesan and one tbsp of grated mozzarella on one half of the circle.
  11. Close the other half of the circle on top of the stuffing with the help of the baking paper.
  12. Seal the sides with your fingertips.Repeat this for each meatball. Place the meatballs on an oven tray which you covered with a layer of baking paper.
  13. Preheat the oven at 180°C. (fan mode on)
  14. Cook the meatballs for 20 minutes.
