(or white vinegar)

Instructions

Pour the olive oil in a large pot, heat it up in low heat.

Add the diced onions and stir for 3 minutes.

Add the arborio rice on top and keep stirring for 1-2 more minutes until the rice gets heated up.

Then pour the wine on top of the rice and stir for 30 seconds until the alcohol evaporates.

Pour one ladle of warm broth on top and keep stirring in low heat until the rice absorbs the broth. Repeat this for 9-10 times until the broth is done.

Add salt and pepper. Keep stirring until the rice absorbs the last of the broth.

When it gains an adequate consistency, add the butter and parmesan on top.

Stir quickly for 1 more minute. Take it away from the burner.

Serve with thyme.
