Peach and Blueberry Summer Cake

Ingredients
  • 3 Eggs
  • 1 Peach (Medium size)
  • 300 g Flour
  • 5 g Vanilla sugar
  • 10 g Baking powder
  • 100 ml Sunflower oil
  • 200 ml Milk
  • 250 g Granulated sugar
  • 1 tsp Cinnamon powder
  • 10 Blueberries
  • 1 tsp Lemon peel
Instructions
  1. Mix the eggs and sugar in a deep bowl with a whisk.
  2. Add the milk, oil, cinnamon, baking powder and vanilla sugar on top. Mix throughly.
  3. Pour the the cake mixture into a large and pre-oiled cake mold.
  4. Peel and slice the peach into thin slices. Place them on the mixture. (Gently push the slices into the cake mixture with your fingertips just for 1-2 mm, this way they won't get burned.)
  5. Then place the blueberries on the mixture where you want them.
  6. Finally sprinkle the lemon peel on top of the cake.
  7. Preheat the oven at 175°C. (fan mode on)
  8. Bake the cake for 35 minutes.
