Tips from the Author

  • Make sure to let the steaks rest in the marination sauce for 2-4 hours. It can even stay overnight in the fridge for better marination.
  • Use the marination sauce also for the cooking process.
  • You can seal the steaks on a heated pan before the actual cooking starts. This way they will keep the sauce and meat juice inside.

    For Marination
  • Grate the orange and lemon peel. Then squeeze them to get orange and lemon juice for the next step.
  • Mix the orange juice, lemon juice, soy sauce, red wine, vinegar and olive oil in a large bowl.
  • Add the spices, grated orange and lemon peels, garlic and honey. Mix it thoroughly.
  • Place the turkey steaks inside the marination sauce. Wrap the bowl and let it rest in the fridge for 2-4 hours. It can even stay overnight in the fridge for better marination.
  • For Cooking
  • Place the marinated turkey steaks and the marination sauce into an oven bag.
  • Add the shallots and butter inside the oven bag and close it tight. Scramble the contents of the bag.
  • Place the oven bag on an oven tray. Puncture 4-5 holes with a toothpick on the upper side of the oven bag.
  • Preheat the oven to 190 degrees (fan mode on).
  • Bake the turkey steaks in the oven for 50 minutes.
  • Take the tray out but leave the oven on. Empty the contents of the oven bag into the tray, place the rosemary into the sauce and place the tray inside the oven again.
  • Bake for 10 more minutes until the outsides of the steaks become crispy.
