- Pour the olive oil in a large pot, heat it up in low heat.
- Add the diced onions and stir for 3 minutes.
- Add the arborio rice on top and keep stirring for 1-2 more minutes until the rice gets heated up.
- Then pour the wine on top of the rice and stir for 30 seconds until the alcohol evaporates.
- Pour one ladle of warm broth on top and keep stirring in low heat until the rice absorbs the broth. Repeat this for 9-10 times until the broth is done.
- Add salt and pepper. Keep stirring until the rice absorbs the last of the broth.
- When it gains an adequate consistency, add the butter and parmesan on top.
- Stir quickly for 1 more minute. Take it away from the burner.
- Serve with thyme.
