For Filling
- Mix the soy sauce, water, 2 tbsp of olive oil, salt, paprika and crushed garlic in a bowl.
- Place the chicken breasts in the bowl and cover them with the mixture.
- Place the chicken breasts on an oven tray which is covered with baking paper. Poir the leftover liquid in the bowl on top of the breasts.
- Preheat the oven at 180°C. (fan mode on)
- Cook the chicken breasts in the oven for 30 minutes.
- Take the breasts out from the oven and leave the tray on the counter to cool down for 5 minutes.
- Take the breasts on a cutting board and chop them into little cubes.
- Transfer the cubes into pan, add 2 tablespoons of olive oil. Start cooking in medium heat.
- After the pan heats up, add the tomato puree and herbs on top. Keep stirring for 4-5 minutes.
- Then take the pan off the burner and leave it on the counter to cool down. For Bechamel Sauce
- Take the butter and oil into a pot and heat it up. Add the flour on top and start cooking in medium heat while you keep stirring.
- When the flour gives out its scent, which takes a couple of minutes, pour the milk on top.
- This time, stir it with a whisk until it boils. Finally add the salt and pepper, cook for 2 more minutes and take it off the burner.
- Leave it on the counter to cool down. For the Packets
- Lay down a tortilla on the counter. Place 2 tablespoons of the chicken stuffing onto the center.
- Close the sides of the tortilla to make a tight packet. Flip it upside down and place it on a baking tray.
- Repeat it for each tortilla.
- Pour the bechamel sauce on top of the packets and sprinkle the top with the cheese you grated.
- Preheat the oven at 190°C. (fan mode on)
- Bake the packets for 20 minutes.
