In this recipe, I wrote the steps for preparing the dough and the sauce for the calzone. I, however, didn’t include the stuffing steps. I left the choice of stuffing ingredients to my lovely readers. In your calzone, you can use any type of cheese, meat and/or veggies to your taste.

    Preparing the Dough
  • Mix half of the water, sugar and yeast in a large bowl.
  • Mix salt and the rest of the water in a different container, when the salt dissolves pour this salty water onto the yeast mixture.
  • Mix the ingredients in the big bowl thoroughly.
  • Start adding the flour gradually while you keep mixing and kneading the dough.
  • When the dough is homogenously mixed, pour the vegetable oil and knead for 1 more minute.
  • When the dough is smooth and thoroughly mixed, cover the bowl and let it rest in a warm place for 1 hour.
  • Making the Sauce
  • While waiting for the dough to rise, you can prepare the sauce.
  • Mix the tomato puree, olive oil, vinegar, spices and salt in a bowl. Set it aside for later.
  • Making the Calzones
  • Divide the risen dough into smaller pieces (each 120 g), roll them into ball shapes between your hands with the help of some extra flour. Set them aside.
  • Take a piece of dough and roll it out on the counter to get a large circle (you can sprinkle some extra flour to help you roll out easier).
  • Pour 3 tablespoons of the sauce onto one half of the circle and spread.
  • Place some of your stuffing onto the sauced half of the circle.
  • Close the other half of the circle on top of the sauced half.
  • Close the sides tightly with your fingers or a fork (You can roll them on top of each other with your fingers or use a fork to tightly press them shut).
  • Repeat this process for each piece of dough.
  • Place the finished calzones on top of an oven tray which is covered with baking paper.
  • Spread the olive oil gently on top of the calzones with the help of an egg brush.
  • Preheat the oven at 170°C (335°F), use the fan mode.
  • Bake the calzones for 20 minutes.
